Bavarian Apple Cheesecake Torte

This recipe is a variation of the original 

Ingredients


4 apples cored, peeled and sliced.  your choice mcintosh, granny smith etc.,,

1/3 cup of sugar, 1/2 teaspoon cinnamon or to taste

Crust 

7 oz. sweetened shredded coconut,  about 11/2 cups packed

1 egg white from large egg

1/2 teaspoon almond extract (optional)

Filling

8 oz. full fat cream cheese  room temperature

1/2 cup sugar

1 teaspoon vanilla extract

1 large whole egg


Method


Butter bottom and sides of a 7 inch removable bottom cake pan

Preheat oven to 350f

Mix the 3 crust ingredients in a mixing bowl until thoroughly mixed and all the coconut is moist.  Place in the cake pan, spread it out evenly and pat it down.  Place in the oven and bake for 12  to 15 mins until it starts to brown slightly.  Remove from oven and place in the freezer to chill

In a mixing bowl cream the cream cheese thoroughly until smooth.  Add the sugar and again blend thoroughly.  Add the vanilla extract and the egg mix till blended

Pour the filling onto the crust and smooth it out evenly

Place the sliced apples on top of the filling in a design of your choice, mix the sugar and cinnamon together and sprinkle evenly over the apples

Bake in 350f oven for 1 hour, until the center is set, test with toothpick, if it comes out dry bingo, it is done

Remove from oven and let it cool on a rack.  I like to refrigerate it before removing the pan.  After it is thoroughly cooled run a butter knife around the edge of the tort and remove from pan.

Place in a serving dish, chill it, serve it, enjoy it
